Haloumi, Prosciutto & Watermelon Salad

I thought I'd start off my blog by sharing the recipe for one of my favourite salads! This salad encompasses three of my favourite foods; Haloumi, Prosciutto & Watermelon - and by the grace of god they taste absolutely divine together! We all know a bowl full of fresh greens is fantastic for your health, but I used to loathe salads (the thought of eating another chicken Caesar or balsamic covered Greek salad still makes me feel queasy), but I've found the trick is to ease yourself into them and make them enjoyable for YOUR tastebuds (don't ever force yourself to eat something which tastes like crap just because it is supposedly "good for you"!). Start by simply adding leafy greens (lettuce, baby spinach, kale etc.) to your favourite meals - even if its pizza/lasagne/a burger for Christ's sake - and top with your favourite dressing. Not only will you be adding beneficial nutrients to your meals, but a raw salad eaten with a cooked meal also aids in digestion. Over time, gradually increase the amount of greens and decrease the amount/type of dressing used. Also EXPERIMENT!!! Try heaps of different salad fillers/dressings and you will be surprised at how delicious a salad can be!




SALAD INGREDIENTS

  • 1 cup Baby Spinach
  • 1 cup Rocket
  • 50g Haloumi
  • a few slices Prosciutto
  • Watermelon, cut into wedges
  • Orange slices
  • Cucumber, ribboned (use a vegetable peeler)
  • Cherry tomatoes, halved
  • Almonds
  • Pine Nuts

HONEY MUSTARD DRESSING INGREDIENTS (not pictured)

  • Juice from half an orange
  • 2 tsp seeded mustard (or to taste)
  • 1 tbsp. oil (olive, flax and avocado oil are great on salads)
  • 1 tsp raw honey
